El tejate es una bebida de origen prehispánico que es parte del gran repertorio y riqueza de nuestras bebidas típicas mexicanas. Y como todas o casi todas estas bebidas, su preparación y consumo tienen una raíz cultural, ceremonial. Es originaria de los Valles Centrales de Oaxaca y se elabora a base de maíz, cacao, hueso de mamey y flor del cacao o rosita de cacao. Esta bebida se distingue por la espuma blanca y grumosa que se forma en su superficie, debida a la flor del cacao. Esta flor se encuentra todo el año en los árboles del rosital, los cuales se localizan principalmente en San Andrés Huayapan, razón por la cual este municipio es considerado la tierra del tejate, donde muchas familias viven de la venta de esta bebida.
